Waffles!
Want the very best Belgian Waffles EVER? Here's the recipe, written at the top of one of the pages in my 30+ year old cookbook. I was given this cookbook as a gift sometime in the late 70's and it's been my mainstay as far as recipes go ever since. I love it because I can tell right where my favorite recipes are because of the condition of the pages. Let's face it. I'm not the neatest cook around. When I make something, I generally leave traces of ingredients all over the kitchen.
So the waffles . . . I got the recipe from my sister who got it from a friend of her family. It has one of the strangest, and most unexpected, ingredients . . . club soda! It's what gives the waffles a lightness and a slightly crisp exterior. They are absolutely delicious. They require just a touch of syrup because, being so light and fluffy, the syrup just soaks right into the waffle. Have I mentioned how good they are? Try them!
